The Perfect Snack: Zucchini Fries with Garlic Aioli!

How to make the perfect Zucchini Fries with a side of Garlic Aioli

Important:

Start with your preparation of sauce and add Zucchini fries to oven with after 25 minutes of the garlic cloves baking (i.e. the last 20 minutes remaining)

 

For the Zucchini Fries:

Ingredients:

1 cup plain bread crumbs

1/4 cup grated Parmesan or pecorino

1 teaspoon crushed red pepper

1/8 teaspoon dried oregano

1/8 teaspoon salt

Dash of pepper

2 large eggs, beaten

4 – 5 Zucchinis

 

Method:

Preheat oven to 220˙C.

Then begin to line your baking sheet with parchment paper.

In a large flat dish/ bowl, mix together your bread crumbs, Parmesan cheese, oregano, finely chopped mint, crushed red pepper flakes, salt and pepper.

Take a medium sized bowl and beat two eggs till mixed.

Cut the zucchini into batons in your desired shape and size, I personally prefer keeping them long but still a bit chunky like your traditional shaped fries.

One by one, dip your zucchini fries in the beaten eggs.

Transfer to the plate with bread crumb mixture, being sure to coat the zucchini thoroughly.

Once you have done the above place the zucchini fries as you go along on the baking sheet.

Bake for 15-20 minutes.

Set a timer to flip fries every ten minutes for even baking.

Remove from oven and serve on platter alongside the Garlic Aioli.

 

For the Roasted Garlic Aioli:

Ingredients:

1 whole head garlic

1 tablespoon olive oil

3/4 cup mayonnaise

Salt and Pepper

1 sprig of chives, diced

 

Method:

Preheat oven to 200 F.

In a small bowl, pour olive oil over peeled whole cloves. Add a dash of salt and pepper to the cloves.

Wrap it in foil and bake for 45 minutes.

Allow for it to cool.

Take the garlic out of its shell and add to a food processor,

You can now add the mayonnaise to the mixture. If needed, a dash more of salt and pepper.

Use the pulse option until the mixture is smooth in texture.

Transfer the Garlic Aioli to your serving bowl and stir in freshly chopped chives.

Portion for five to six people

Ingredients:

6 x Small Sweet potatoes

Garlic and Herb Mix

Black Pepper

Cayenne Pepper

Paprika

Himalayan Salt

Sprig of Rosemary

Cooking Oil (estimate 30 ml)

Baking Tray

Method:

Preheat oven to 180 degrees Celsius

Wash the Sweet Potatoes thoroughly under cold water.

Slice up the sweet potatoes according to preferred size

Coat with oil and spice to your desire. I use a Garlic and Herb mix, Paprika, Cayenne Pepper, Black Pepper and Himalayan Salt. One can also place a sprig of rosemary in the center or sprinkle around.

Lay slices out on a baking tray and bake for about 40 minutes at 180 degrees Celsius until golden.

DIY Honey Shampoo

If you are looking for a healthier more natural way to wash your hair without stripping it of all its essential oils, which is the case with most hair care products on our shelves, then I would recommend you try out this deliciously natural honey shampoo.

Raw honey is a natural  anti-fungal and antibacterial with a pH of 4. This makes the scalp slightly more acidic which may aid in combating dandruff as the pH of the scalp ranges from 4-7.

Honey is also known to moisturise the hair and in turn help with frizz as well as decrease the amount of washes needed.

Another advantage to using this home-made shampoo is that it is quick and easy to whip up! Simply use 3 Tablespoons of filtered water for every 1 Tablespoon of Honey.

I recommend using filtered water as it is less reactive with the raw honey. Also, please use raw honey as regular honey is highly processed and subjected to high levels of heat, killing all its healing properties.

Honey shampoo de-tangles and softens the hair so there is no need for conditioner. Simply wet hair, massage shampoo onto the scalp for 5 minutes and rinse.

Winter Warmer: Turmeric Milk

Ingredients

2 cups fresh whole milk

1tsp turmeric powder

1/2- 1 tsp cinnamon

1/2 tsp nutmeg

1/2 inch roughly chopped ginger

2 cracked cardamom pods

pinch of black pepper

Method

1. Place milk in a pot along with all other ingredients on stove at a medium heat.

2. Keep stirring the pot until milk starts to simmer.

3. Once milk has been brought to a simmer remove from heat and pour into cup. Honey is optional for extra sweetness.

Ingredients:

  • 2 cups Kefir
  • 1  3/4 cup Flour
  • 1 tsp Baking Soda
  • 1  1/2 tsp Baking Powder
  • 2 tsp Sugar
  • pinch of salt
  • 4-6 ounces Chocolate chips
  • Honey to drizzle
  • 2 large Eggs

Directions:

  1. Mix the dry ingredients together first.
  2. Blend the eggs and pour into mixture.
  3. Alternate pouring of eggs with Kefir into the dry mix.
  4. Cookin pan by adding large spoonfull drops onto pan.
  5. Enjoy with a sprinkle of honey and even sliced bananas on top if desired.
